Recipe: Potato Salad

Potato Salad

1kg marble potatoes (6-8 medium-sized potatoes), cooked
6 hard boiled eggs, cubed
1 white onion: finely chopped
1 tsp salt
 
Sauce Dressing:
2 eggs
1 tsp cornstarch
1 cup sugar
1/2 cup vinegar
1 cup fresh milk
1 tsp mustard
 
1/4 cup butter
1 cup mayonnaise
 
Instructions:
1. In a large bowl, toss the potatoes with the onion, salt and hard boiled eggs; set aside
2. In a sauce pan, whisk the eggs, cornstarch and sugar then cook over medium heat
3. Stir in the vinegar, milk and mustard then frequently stir until sauce thickens 
4. Remove from heat then add the butter
5. Once the sauce cools, stir in the mayonnaise then add to the potatoes
6. Serve over chilled lettuce
